1.   Chicken Kozhukatta

Chicken Kozhukatta is a simple and healthy non-vegetarian dish that eases your hunger on a stressed evening.

How to prepare:

 

Prepare the chicken kheema mix and keep it aside.

Heat some water in a vessel adding salt, fennel seeds, and grated coconut.

Take Ajmi's Rice Powder and add the hot water little by little to the rice powder until a smooth dough is formed

Roll the dough into medium-sized balls and flatten them with your palm (you can grease your palm with little oil).

Fill it with the chicken filling and reshape it into a ball.

Steam the balls in a steamer or idli cooker for about 13 – 15 minutes.

2. Elayappam \ Ela Ada

Ada or Elayappam is a traditional Kerala delicacy. It is made of coconut and sugar, which is layered inside the rice powder paste in banana leaf and steamed in a steamer for idli mold vessels.

How to prepare:

 

Roast Ajmi's Rice Powder on lame for 5 minutes.

In a saucepan take water, ghee, and salt.

Pour the hot water over flour and mix using a spoon.

Knead to a smooth non-sticky dough by greasing little ghee to hand.

Take banana leaves and warm them.

Take a ball-sized dough and flatten it over a banana leaf and fill the stuffing.

Place in a steamer and steam for 15 minutes or until it is cooked.

3. Vegetable Momos

Momos are popular street food in northern parts of India. These are also known as Dim Sum and are dumplings made from Rice powder with savory stuffing.

How to prepare:

 

Take Ajmi's Rice Powder, salt, and baking powder, knead it well and keep it aside.

Heat oil and add the onion and garlic. Saute over high heat and add the carrot and cabbage. Turn around over high heat till glossy.

Take it off the heat and mix in the soya sauce, salt, vinegar, and black pepper.

Roll the dough thin and cut it into rounds take a round, wet edge and place some filling in the center.

4. Kinnathappam

How to prepare:

 

Grind Ajmi's Rice Powder, sugar, cardamom, and coconut milk into a fine batter by adding water gradually.

Add dry fruits and nuts if needed

Place in a steamer and steam for 15 minutes or until it is cooked.

5. Neyyappam

Neyyappam as the name suggests is appam made in ghee. It is traditional appam made during important celebrations.

How to prepare:

 

Heat a non-stick pan, add jaggery and water, and cook, stirring till a thick syrup is formed.

Heat ghee in another non-stick pan, add coconut slices and saute till light brown.

Drain the rice and put it in a blender jar, add jaggery syrup, and grind to a fine paste. Transfer into a mixing bowl, add Ajmi's Rice Powder, and mix well.

Add the fried coconut slices, sesame seeds, cardamom powder, cumin seeds, ginger powder, nutmeg powder, and salt.

Heat sufficient oil in a Kadai, pour a ladleful of batter, and deep fry on medium-low heat till golden brown.
